I'm Cooking with Gas - Mini Turkey Meatball MashUp

I've been perusing the recipe gamut here lately and I gotta tell you, in case you haven't noticed, there are all kinds! Multiple recipes even just for Turkey Meatballs...Some include oats in place of bread crumbs, some include sauteed spinach or onions.  I decided to do a mashup of these recipes I found and chose the ingredients I know I would eat and ones that I thought my family would like. I think I may have come up with a hit. Everyone in the family tried and liked them. Not that they would eat them on a regular basis because you know, turkey means healthy.  That's my husband's stance and he's sticking to it but he still tries everything I make and has no problem giving his opinion. He's a good guinea pig that way.




Mini Muffin Turkey Meatballs

1 Lb Ground Turkey
1 small onion - I used one slightly bigger than a ping pong ball
1-2 cloves garlic finely diced
1 Egg
1/2 C bread crumbs
1/4 C finely shredded parmasean cheese
1/2 tsp oregano
1 tsp parsley finely chopped fresh or flakes
1-2 Tbl Worscestershire Sauce
1 Tbl tomato paste

Preheat over to 400.
Mix turkey and other ingredients in a bowl until combined.
Spoon mixture into a pre-sprayed or oiled mini muffin pan.
Bake for 25 - 30 minutes.
Makes 24 Mini Muffin Meatballs


I thought these turned out great and would be good with spaghetti or just in sauce for a game. My husband, convinced he has heartburn because of them, makes me wonder if I used a little too much garlic..I'll ease up on it next time I make these.

I've gotten some inspiration from some of these recipes that I've actually been cooking and baking in my kitchen since July more often than I have in a long time. I switched my kitchen out to unprocessed for the most part, aside from the places my husband insists or if I should happen to send him shopping. 

I've also tried some great recipes from my sister's blog this week - our Sunday meal was her Breakfast Cupcakes and Paleo Pumpkin Pancakes. Those were both approved by all family members, as in I better make a double batch of pancakes next time! She does a weekly series of Foodie Friday and I'm thinking that I may just have to start joining her.
